Thai Coconut Stir Fry
A quick and easy Thai-inspired stir fry with coconut milk, crispy vegetables, and nutty flavors.
Ingredients
- β1 can (14 oz) coconut milk
- β1 cup crispy fried noodles
- β2 tbsp nutty peanut butter
- β2 tbsp stir-fry sauce
- β2 tbsp coconut oil
- β1 medium onion
- β1 medium bell pepper
- β1 cup snow peas
Instructions

Heat the coconut oil in a large skillet or wok over medium-high heat.

Add the onion and bell pepper and stir-fry until tender, about 3-4 minutes.

Add the snow peas and stir-fry for another 2-3 minutes.

In a small bowl, whisk together the peanut butter, stir-fry sauce, and 1 tablespoon of coconut milk.

Pour the peanut butter mixture into the skillet and stir-fry until the sauce thickens, about 1-2 minutes.

Stir in the remaining coconut milk and bring to a simmer.
