Thai Coconut Chicken Pilaf
A flavorful and aromatic Thai-inspired dish featuring crispy chicken, roasted flavors, and a delicious coconut-infused pilaf.
Ingredients

- β1 cup uncooked white ricejasmine or regular
- β1 can (14 oz) coconut milkfull-fat
- β1/2 cup roasted peanutschopped
- β1/4 cup crispy fried shallotschopped
- β2 tbsp fish sauceoptional
- β1 tsp soy sauceoptional
- β2 tbsp lime juicefreshly squeezed
