Mexican Squid and Croquette Fritters
A delicious fusion of Mexican and seafood flavors, these crispy fritters are perfect for a snack or light meal.
Ingredients
- β1 pound Baby squid, cleaned and cut into small pieces
- β1 cup Crispy croquettes, crushed
- β1/2 cup Spanish onion, finely chopped
- β2 cloves Garlic, minced
- β1/4 cup Cilantro, chopped
- β2 tablespoons Lime juice
- β1/4 cup Olive oil
- β Salt and pepper

Heat the olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute, until fragrant.

Add the squid pieces and cook for 2-3 minutes, until they start to opaque.

Add the crushed croquettes, chopped cilantro, and lime juice. Cook for another 2-3 minutes, until the mixture is well combined.

Season with salt and pepper to taste.

Using a spoon or small ice cream scoop, form the mixture into small patties.

Heat about 1/2 inch of oil in a large skillet over medium heat.

When the oil is hot, add a few of the patties and cook for 2-3 minutes on each side, until golden brown and crispy.
