Spicy Chicken Bowl

Ingredients

- β1/4 cup crispy fried onionsstore-bought or homemade
- β1 medium red onionthinly sliced
- β1 medium cucumberthinly sliced
- β1/4 cup tomato saucespicy or regular
- β2 tablespoons soy saucelow-sodium
- β2 tablespoons brown sugarfor balancing flavors
- β1/4 cup fresh cilantrochopped

Preheat oven to 400Β°F (200Β°C).

Season the chicken with salt and pepper. Bake in the oven for 20 minutes or until cooked through.

In a large pan, heat 1 tablespoon of oil over medium heat. Add the sliced onions and cook until crispy.

Add the sliced red onion and cucumber to the pan and cook for 5 minutes.

In a small bowl, whisk together the tomato sauce and soy sauce. Pour the sauce over the vegetables and stir to combine.
