Crispy Thai Fried Rice
A classic Thai dish made with crispy fried rice, spring onions, and a variety of spices.
Ingredients
- β2 cups Crispy Fried Ricepreferably leftover
- β1/2 cup Spring Onionschopped
- β2-3 Thai Red Chilisliced
- β2 tablespoons Fried Shallotschopped
- β2 tablespoons Fish Sauceadjust to taste
- β2 tablespoons Soy Sauceadjust to taste
- β1 tablespoon Brown Sugaroptional
- βto taste Salt
- βto taste Pepper
Instructions

Heat 2 tablespoons of oil in a wok over medium heat.

Add the sliced red chili and fry until fragrant.

Add the chopped spring onions and fry until softened.

Add the crispy fried rice and stir-fry for 2-3 minutes.

Add the fried shallots, fish sauce, soy sauce, brown sugar, salt, and pepper. Stir-fry for another minute.

Taste and adjust the seasoning as needed.

Transfer the fried rice to a serving platter.

Garnish with chopped spring onions and serve immediately.
