Tunisian Chickpea Bowl
A flavorful and nutritious bowl that combines the best of tunisian cuisine with the convenience of a quick meal.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β1/4 cup crispy olivespitted
- β2 tbsp umami-rich tapenadehomemade or store-bought
- β1 tsp cuminground
- β1 tsp corianderground
- β1/4 cup chopped fresh parsleyoptional

Preheat the oven to 400Β°F (200Β°C).

In a bowl, whisk together cumin and coriander.

Add the chickpeas to the bowl and toss to coat.

Transfer the chickpeas to a baking sheet and roast for 20-25 minutes.

Meanwhile, heat the tapenade in a small saucepan over medium heat.
