- β1 cup Enchilada sauce
- β1/2 cup Crumbly cheese
- β1 tablespoon Vegetable oilfor brushing
- β1 medium Onionchopped
- β1 medium Bell pepperchopped
- β1 medium Tomatochopped
- β1/4 cup Cilantrochopped

Preheat oven to 375Β°F (190Β°C).

Brush the inside of the Dutch oven with vegetable oil.

Add a layer of enchilada sauce to the bottom of the Dutch oven.

Arrange a layer of vegetables on top of the sauce.

Sprinkle crumbly cheese over the vegetables.

Repeat the layers one more time, finishing with the cheese on top.

Cover the Dutch oven with a lid and bake for 20 minutes.
