Cochinita Pibil Tacos
A traditional Mexican dish from the Yucatecan region, Cochinita Pibil is a slow-roasted pork cooked in citrus juice and spices. Serve with crunchy tacos, fresh cilantro, and a side of beans.

- β2 pounds Long pork shoulderBoneless

- β2 teaspoons Yucatecan chili powder
- β3 cloves GarlicMinced
- β1 can BeanBlack beans, drained and rinsed
- β8-10 shells Crunchy tacos shells
- β1 cup Citrusy salsaSee below for ingredients

1. In a blender or food processor, combine lime juice, chili powder, garlic, and 1 tablespoon water. Blend until smooth.

2. Rub the marinade all over the pork shoulder, making sure to coat it evenly.

3. Cover the pork and refrigerate for at least 2 hours or overnight.

4. Preheat your oven to 300Β°F (150Β°C).

5. Remove the pork from the marinade and place it in a large Dutch oven or oven-safe pot with a lid.

6. Cover the pot and transfer it to the preheated oven.

7. Roast the pork for 2-3 hours, or until it's tender and easily shreds with a fork.

8. While the pork is cooking, prepare the citrusy salsa by combining diced citrus fruits (such as oranges, grapefruits, and lemons), red onion, cilantro, and lime juice in a bowl.

9. Once the pork is done, let it rest for 10-15 minutes before slicing it thinly.

10. Warm the tacos shells according to package instructions.

11. Assemble the tacos by placing a few slices of the roasted pork onto a shell, followed by a spoonful of black beans, a sprinkle of cilantro, and a dollop of citrusy salsa.
