Filipino Oat Bites
A crispy and comforting Filipino-inspired snack made with oats and lumpia. Perfect for a quick pick-me-up.
Ingredients
- β1 cup Rolled Oats
- β4-6 pieces Crispy Lumpia (Filipino Spring Rolls)chopped
- β2 tablespoons Coconut Sugar
- β1 tablespoon Coconut Oil
- β1 teaspoon Vanilla Extract
- β1/4 cup Lumpia Filling (Optional)

Preheat oven to 375Β°F (190Β°C).

In a large bowl, mix together oats, coconut sugar, and chopped lumpia.

In a separate bowl, whisk together coconut oil and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until combined.

If using lumpia filling, fold it into the oat mixture.

Scoop tablespoon-sized balls of the mixture onto a baking sheet.

Bake for 15-20 minutes, or until lightly golden brown.
