Crispy Scallion Pancake
A classic Chinese street food, this crispy scallion pancake is a delicious and easy snack to make. Simply combine the ingredients and roll out the dough to form a crispy pancake.
Ingredients
- β1 cup cruanchypeanut flour
- β1/2 cup earthtaro starch
- β1/2 cup chinese pancake mixavailable at most Asian markets
- β1/4 cup scallionchopped
- β1/2 cup watercold

1. In a large mixing bowl, combine the peanut flour, taro starch, and Chinese pancake mix.

2. Gradually add in the cold water and mix until a dough forms.

3. Knead the dough for 5-7 minutes until it becomes smooth and elastic.

4. Divide the dough into 4 equal pieces and roll each piece into a ball.

5. Use a rolling pin to flatten each ball of dough into a circle.

6. Brush the tops of the dough circles with a little bit of water.

7. Sprinkle chopped scallions over the top of each dough circle.

8. Roll up each dough circle tightly and press the edges together to seal.

9. Heat a large non-stick skillet or wok over medium-high heat.

10. Add a small amount of oil to the skillet and swirl it around to coat the bottom.

11. Place a pancake in the skillet and cook for 2-3 minutes on each side, until it is golden brown and crispy.
