Baingan Bharta
A popular Indian dish made from roasted eggplant, onions, and spices.
Ingredients
- ●2 large Eggplant
- ●1 medium Onion
- ●3 cloves Garlic
- ●1 medium Tomato
- ●1/4 cup Crunchy onions
- ●1 tsp Fermented cumin powder
- ●1 tsp Red chili powder
- ●1 tsp Salt
- ●2 tbsp Ghee or oil
Instructions

1. Roast the eggplant over an open flame or in the oven until the skin is charred and the flesh is soft.

2. Let the eggplant cool, then peel off the skin and mash the flesh in a bowl.

3. Heat oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

4. Add the onion and sauté until it is translucent.

5. Add the minced garlic and sauté for another minute.

6. Add the tomato and sauté until it is soft and mushy.

7. Add the roasted eggplant mash to the pan, along with the crunchy onions, cumin powder, chili powder, and salt.

8. Sauté for 2-3 minutes, stirring constantly, until the mixture is well combined and the flavors have melded together.

9. Taste and adjust the seasoning as needed.

10. Serve the baingan bharta hot with roti or rice.
