Greek-Style Freekeh Bowl
A hearty and flavorful bowl filled with the nutty taste of freekeh, the crunch of fresh vegetables, and the tang of a Greek yogurt sauce.

- β1 cup Freekeh
- β1/2 cup Greek Yogurt
- β2 medium Crunchy Carrots
- β1 pint Cherry Tomatoes
- β1/4 cup Kalamata Olives
- β1/4 cup Fresh Parsley
- βto taste Salt
- βto taste Black Pepper

1. In a medium saucepan, bring 2 cups of water to a boil.

2. Add 1 cup of freekeh and reduce heat to low. Simmer for 20 minutes or until tender.
