Crunchy Tofu Stir Fry
A quick and easy Asian-inspired dish made with crispy tofu and crunchy vegetables.
Ingredients
- β1 block tofupressed and drained
- β1 cup crunchypeanuts or any other crunchy nuts
- β2 tablespoons herbalchopped fresh herbs like cilantro or basil
- β2 tablespoons stirvegetable oil
- β1 cup frymixed bell peppers and carrots
- β1 tablespoon soy sauceadjust to taste
- β1 tablespoon rice vinegaradjust to taste

1. Cut the tofu into small cubes and coat with a pinch of salt.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

3. Add the tofu to the skillet and cook until golden brown, about 3-4 minutes.

4. Remove the tofu from the skillet and set aside.

5. Add the remaining 1 tablespoon of vegetable oil to the skillet.

6. Add the mixed bell peppers and carrots to the skillet and cook until tender, about 3-4 minutes.

7. Add the chopped fresh herbs to the skillet and stir to combine.

8. Add the cooked tofu back to the skillet and stir to combine with the vegetables and herbs.

9. In a small bowl, whisk together the soy sauce and rice vinegar.

10. Pour the sauce over the tofu and vegetables and stir to combine.
