Spicy Thai Noodle Soup
A spicy and flavorful noodle soup made with a variety of Thai ingredients.

Ingredients
- β200g noodlesthin rice noodles
- β50g jeenThai rice flour
- β1/4 cup crunchypeanuts or crispy fried shallots
- β2 cups lightchicken or vegetable broth
- β2 cups thaimixed vegetables (e.g. bell peppers, carrots, bean sprouts)
- β2 tbsp soy sauceor to taste
- β1 tsp fish sauceor to taste
- β1 tsp sugaror to taste
- β1/2 tsp chili flakesor to taste
- β2 tbsp lime juiceor to taste

Instructions

Cook the noodles according to the package instructions.

In a large pot, heat the light over medium heat.

Add the jeen and stir-fry for 1-2 minutes.

Add the crunchy and stir-fry for another minute.

Add the thai and stir-fry for 2-3 minutes.

Add the soy sauce, fish sauce, sugar, and chili flakes. Stir to combine.

Add the cooked noodles and stir to combine.
