Middle Eastern Egg Tagine
A flavorful and spicy Middle Eastern-inspired egg dish made with a rich tagine sauce. This recipe is perfect for a quick and easy breakfast or brunch.
Ingredients

- β1 tsp middle eastern tagine spice mix
- β1/4 cup crunchy chopped parsley
- β1/2 tsp crushed eastern spices (cumin, coriander)
- β2 tbsp olive oil
- βto taste salt
- β1/4 tsp crushed red pepper
- β2 yolks
Instructions

Crack the eggs into a bowl and whisk them together. Set aside.

Heat the olive oil in a large skillet over medium-high heat.

Add the crushed eastern spices (cumin, coriander) and cook for 1 minute.

Add the crushed red pepper and cook for another minute.

Pour in the tagine spice mix and cook for 1-2 minutes.

Add the whisked eggs to the skillet and cook until the edges start to set.

Use a spatula to gently scramble the eggs and cook until they are cooked through.
