Spicy Spanish Croquette Bites
A crunchy and spicy twist on traditional Spanish croquettes, served with a side of tangy salsa.
Ingredients
- β200g Tofupressed and drained
- β6 Crunchy Croquettesstore-bought or homemade
- β1 tsp Spanish Smoked Paprikadried
- β1 tsp Spicy Harissaadjust to taste
- β1/4 cup Chopped Fresh Parsleyoptional
- β1 cup Breadcrumbsgluten-free
- β1 Eggbeaten
- βto taste Salt
- βto taste Black Pepper

1. Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

2. In a food processor, crumble the tofu into small pieces.

3. Add the crushed croquettes, smoked paprika, and harissa to the food processor. Process until well combined.

4. Stir in the chopped parsley (if using).

5. In a shallow dish, mix together the breadcrumbs and a pinch of salt and pepper.

6. In a separate dish, beat the egg.

7. Using your hands, shape the tofu mixture into small balls, about 1 1/2 inches (3.8 cm) in diameter.

8. Dip each ball into the beaten egg, coating completely, then roll in the breadcrumb mixture to coat.

9. Place the coated balls onto the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each.
