Thai Curry Noodle Soup
A spicy and aromatic Thai-inspired noodle soup made with curry paste and crunchy peanuts.
Ingredients
- β2 tablespoons Thai curry paste
- β1 can (14 oz) coconut milk
- β2 cups chicken broth
- β1/2 cup, chopped peanuts
- β8 oz rice noodles
- β2, sliced bell peppers
- β1, thinly sliced onion
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β1 teaspoon salt
Instructions

Cook rice noodles according to package instructions. Drain and set aside.

In a large pot, heat 2 tablespoons of oil over medium heat.

Add the onion and bell peppers and cook until softened, about 5 minutes.

Add the curry paste and cook for 1 minute, stirring constantly.

Pour in the chicken broth and coconut milk, and bring to a simmer.

Add the fish sauce and sugar, and stir to combine.

Add the cooked noodles, peanuts, and salt. Stir to combine.
