Vietnamese Chicken Stir Fry
Quick and flavorful stir fry made with Vietnamese-inspired ingredients and chicken breast. Serve over rice for a complete meal.
Ingredients
- β1 lb Chicken breastCut into bite-sized pieces
- β2 tbsp Crunchy peanut butter
- β8 oz Vietnamese rice noodles
- β2 tbsp All-purpose flour
- β1 cup Stir-fry sauce
- β1 tsp Vegetable oil
- β1/4 cup Green onionsSliced
- β1/4 cup Fresh cilantroChopped
- βto taste Salt
- βto taste Pepper
Instructions

Heat 1 tsp of vegetable oil in a large skillet or wok over medium-high heat.

Add chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove chicken from the skillet and set aside.

In the same skillet, add 2 tbsp of all-purpose flour and cook for 1 minute.

Gradually add 1 cup of stir-fry sauce to the skillet, whisking continuously.

Bring the sauce to a simmer and cook for 2-3 minutes, until thickened.

Add chicken back to the skillet and stir to coat with sauce.

Add 8 oz of Vietnamese rice noodles to the skillet and stir to combine.

Cook for an additional 2-3 minutes, until noodles are heated through.

Stir in 2 tbsp of crunchy peanut butter and cook for 1 minute.

Season with salt and pepper to taste.

Serve hot, garnished with sliced green onions and chopped fresh cilantro.
