Causa de Papa Rellena
A traditional Peruvian dish consisting of stuffed potatoes with chicken salad and avocado.
Ingredients

- ●1 Avocado1 ripe avocado
- ●1/2 Diced onion1/2 cup diced onion
- ●1/2 Diced tomato1/2 cup diced tomato
- ●2 tbsp Mayonnaise
- ●1/4 cup Cilantrochopped cilantro

Bake the potatoes at 400°F (200°C) for 45-50 minutes, or until tender.

Meanwhile, grill or cook the chicken breast until it reaches an internal temperature of 165°F (74°C).

Let the chicken rest for 5 minutes before slicing it into small pieces.

In a bowl, mix together the sliced chicken, diced onion, diced tomato, mayonnaise, and chopped cilantro.

Once the potatoes are done, let them cool for a few minutes before slicing them in half lengthwise.

Scoop out the flesh of the potatoes, leaving about 1/4 inch of the potato around the skin.

Fill the potato skins with the chicken salad and top with diced avocado.
