Filipino-Style Pork in Dark Crispy Sauce (Dinuguan)
A rich, savory, and slightly sweet Filipino dish made with pork blood and offal, served with steamed rice.
Ingredients
- ●1 pound Pork bellyCut into 2-inch cubes
- ●1 medium OnionChopped
- ●3 cloves GarlicMinced
- ●1 cup Pork bloodDefatted
- ●1 tablespoon Filipino vinegarOptional

In a pan, heat 2 tablespoons of oil over medium heat. Sear the pork belly until browned, then set aside.

In the same pan, sauté the onion and garlic until softened.

Add the pork blood and stir until combined with the onion and garlic mixture.

Return the pork belly to the pan and add the Filipino vinegar (if using). Season with salt and black pepper to taste.

Simmer the mixture over low heat for 10-15 minutes, stirring occasionally, until the sauce has thickened and the pork is cooked through.
