Decadent Greek Eggplant Wrap
A flavorful and healthy wrap filled with roasted eggplant, feta cheese, and a tangy tzatziki sauce.
Ingredients

- β1/2 cup, crumbled feta cheese
- β1/4 cup tzatziki saucestore-bought or homemade
- β1 large flour tortillaor gluten-free wrap
- β1/4 cup, chopped fresh parsley
- β2 tablespoons lemon juice

Preheat oven to 400Β°F (200Β°C).

Place eggplant slices on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes, or until tender and lightly browned.

In a small bowl, mix together tzatziki sauce and lemon juice.

Warm the tortilla by wrapping it in a damp paper towel and microwaving for 20-30 seconds.
