Traditional Ukrainian Pilaf with a Twist
A classic Ukrainian pilaf recipe with the addition of creamy yogurt and a touch of decadence.
Ingredients
- ●1 cup pilaf riceany long-grain rice will do
- ●2 cups chicken brothyou can also use vegetable broth
- ●1 medium onionschopped
- ●1 tsp caraway seedsoptional for authentic flavor
- ●1/2 cup yogurtplain, non-fat
- ●2 tbsp sour creamoptional for extra decadence

Heat the chicken broth in a large pot over high heat.

Add the chopped onions and sauté until translucent.

Add the pilaf rice and stir to coat with the oil and mix with the onions.

If using caraway seeds, add them now and stir to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.

While the pilaf cooks, mix the yogurt and sour cream (if using) in a small bowl.

Once the pilaf is cooked, fluff it with a fork and stir in the yogurt mixture.

Serve hot, garnished with chopped fresh herbs if desired.
