Spanish Gazpacho Oats Bowl
A twist on traditional gazpacho, this hearty Spanish-inspired oat bowl is perfect for a filling breakfast or snack.
Ingredients
- β1/2 cup Rolled Oatspreferably steel-cut
- β1 cup Gazpachohomemade or store-bought
- β1/2 cup Crushed Tomatoesfresh or canned
- β2 tsp Extra-Virgin Olive Oilfor serving
- β1 slice Crusty Breaddiced for topping
- β1/4 cup Fresh Cilantrochopped for garnish
- β1 tsp Red Wine Vinegaroptional
- βto taste Salt and Pepperfor seasoning
Instructions

In a medium saucepan, bring 2 cups of water to a boil.

Add 1/2 cup of rolled oats and reduce heat to low.

Simmer for 5 minutes or until oats have absorbed most of the water.

In a separate bowl, combine gazpacho, crushed tomatoes, and red wine vinegar (if using).

Stir in diced crusty bread and season with salt and pepper.

To assemble the oat bowls, place cooked oats in a bowl and top with gazpacho mixture.
