Kenyan-Style Grilled Tofu Skewers
A flavorful and colorful vegetarian dish inspired by Kenyan cuisine, featuring tangy tofu skewers grilled to perfection.
Ingredients

- β2 tsp kenyan-style spice blendstore-bought or homemade
- β2 tbsp olive oilfor brushing skewers
- β2 tbsp lemon juicefor marinating
- β1 tsp chili flakesoptional, for some heat
- β1 large onioncut into large chunks
- β2 large bell pepperscut into large chunks
- β1 large zucchinicut into large chunks
- β10-12 skewerssoaked in water for 30 minutes

Preheat grill to medium-high heat.

In a large bowl, whisk together kenyan-style spice blend, lemon juice, and chili flakes (if using).

Add the cubed onion, bell peppers, and zucchini to the marinade and toss to coat.

Thread the tofu and marinated vegetables onto the skewers, leaving a little space between each piece.

Brush the skewers with olive oil and season with salt and pepper.

Grill the skewers for 8-10 minutes per side, or until the tofu is golden brown and the vegetables are tender.
