Pabellon Criollo Beef Stew
A classic Venezuelan beef stew made with tender beef and crispy plantains. This hearty dish is perfect for a cold evening.
Ingredients
- β1 lb beef stew meatCut into 1-inch cubes
- β2 arbequena chili peppersDiced
- β1 medium onionDiced
- β3 cloves garlicMinced
- β2 plantainsSliced into 1/2-inch rounds
- β1 tsp cuminGround
- β1 tsp corianderGround
- β1 tsp saltTo taste
- β1/2 tsp black pepperTo taste
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes. Remove from pot and set aside.

Add onion and cook until softened, about 3 minutes.

Add garlic and cook for 1 minute.

Add chili peppers and cook for 1 minute.

Add cumin, coriander, salt, and pepper. Cook for 1 minute.

Add beef back into the pot and pour in beef broth.

Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F for 1 1/2 hours, or until beef is tender.

About 30 minutes before serving, add sliced plantains to the pot.

Continue cooking until plantains are crispy and golden brown.
