Spicy Tunisian Paella
A twist on the classic Spanish dish, this spicy Tunisian paella is made with deep-fried chorizo and a blend of African and Mediterranean spices.
Ingredients
- β1 pound ChorizoDeep-fried until crispy
- β1 cup Paella riceShort-grain rice
- β2 Tunisian chilli peppersDiced and seeded
- β1 medium OnionDiced
- β3 cloves GarlicMinced
- β2 tablespoons Tomato pasteDried
- β1/4 cup OlivesPitted and sliced
- β1 teaspoon PaprikaSmoked

Heat oil in a large paella pan over medium-high heat.

Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the diced Tunisian chilli peppers and cook for an additional 2 minutes.

Add the chorizo and cook until crispy, about 5 minutes.

Add the paella rice and cook for 1-2 minutes, stirring constantly.

Add the tomato paste, smoked paprika, salt, and pepper. Stir to combine.

Add 2 cups of water and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.

Stir in the pitted and sliced olives.
