Filipino Chicken Stir Fry
A classic Filipino-inspired dish with a twist of Indian spices. This chicken stir fry is a flavorful and aromatic meal, perfect for a weeknight dinner.
Ingredients
- β1 lb Chicken breast
- β8 oz Canton noodlesgluten-free substitute
- β8 oz Pancit (Filipino-style noodles)use in addition to or in place of Canton noodles
- β1 cup Mixed vegetablessuch as bell peppers, carrots, and snap peas
- β2 tbsp Coconut oil
- β1 tsp Garam masala
- β1/2 tsp Turmeric
- βto taste Salt
Instructions

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the chicken breast and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet.

Add the mixed vegetables and cook until tender, about 3-4 minutes.

Add the Canton noodles (or Pancit) to the skillet and stir to combine with the vegetables.

Return the chicken to the skillet and stir to combine with the noodles and vegetables.

Add the garam masala and turmeric to the skillet and stir to combine.
