Tunisian Frittata
A flavorful, gluten-free frittata packed with the rich flavors of Tunisia. This omelette-style dish is perfect for a quick, satisfying breakfast or snack.
Ingredients

- β2 tablespoons Capers
- β2 cloves, minced Garlic
- β1/2 cup, diced Onion
- β1 cup, crumbled Delicate cheese
- β6 large eggs Eggs
- β1/4 cup, chopped Fresh parsley
- β1/2 teaspoon Salt
- β1/2 teaspoon Black pepper

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 2 tablespoons of oil over medium heat. Add the sliced olives, capers, garlic, and onion. Cook until the vegetables are softened, about 5 minutes.

In a large bowl, whisk together the eggs, crumbled cheese, salt, and black pepper.

Pour the egg mixture over the cooked vegetables in the skillet. Cook for 2-3 minutes, until the edges start to set.
