Roasted Squash Pilaf
A flavorful and healthy pilaf dish made with roasted butternut squash and served with a delicate twist.
Ingredients
- β1 medium-sized Butternut squash
- β1 cup Ukrainian pilaf
- β2 tablespoons Olive oilfor roasting
- βto taste Salt
- βto taste Black pepper
- βchopped (for garnish) Fresh parsley
Instructions

Preheat the oven to 400Β°F (200Β°C).

Peel and cube the butternut squash.

Place the squash on a baking sheet, drizzle with olive oil, and season with salt and black pepper.

Roast the squash in the preheated oven for 20-25 minutes or until tender.

While the squash is roasting, cook the Ukrainian pilaf according to package instructions.

Once the squash is done, fluff it with a fork and add it to the cooked pilaf.
