French Chickpea Terrine
A French-inspired terrine made with chickpeas, crispy bacon, and delicate herbs.
Ingredients
- ●1 (15 ounce) can chickpeas, drained and rinsed
- ●6 slices bacon, crispy
- ●1 medium onion, finely chopped
- ●1 medium carrot, peeled and grated
- ●2 stalks celery, finely chopped
- ●3 cloves garlic, minced
- ●2 sprigs thyme, fresh
- ●1/2 loaf french bread, cubed
- ●1/2 cup, grated gruyère cheese
- ●1 (1-quart) mold terrine mold

1. Preheat the oven to 375°F (190°C).

2. In a large skillet, cook the bacon over medium heat until crispy. Remove from heat and set aside.

3. In the same skillet, cook the onion, carrot, and celery until softened. Add the garlic and cook for 1 minute.

4. In a large bowl, combine the cooked vegetables, chickpeas, thyme, and cooked bacon.

5. In a separate bowl, beat the eggs and mix with the grated Gruyère cheese.

6. Grease the terrine mold with butter and layer the bread, vegetable mixture, and egg mixture, ending with a layer of bread.

7. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

8. Remove from the refrigerator and let sit at room temperature for 30 minutes.
