Crispy Khanom Chicken Bites
Delicate Thai-inspired chicken bites coated in crispy northern-style batter, served with a side of sweet and tangy sauce.

- β500g boneless chicken breast
- β1 cup all-purpose flourgluten-free option available
- β2 tbsp thai red curry paste
- β1 cup northern-style crispy batter mix
- β2 cups vegetable oil
- β1/2 cup thai sweet chili sauce
- β2 tbsp fish sauce
- β1 tsp sugar
- β3 cloves garlic
- β1/4 cup green onions

1. In a large bowl, combine the flour, curry paste, and a pinch of salt.

2. Add the chicken to the bowl and mix until the chicken is evenly coated with the flour mixture.

3. Dip each piece of chicken into the flour mixture, shaking off any excess.

4. Heat about 1-2 inches of vegetable oil in a large skillet over medium-high heat.

5. When the oil is hot, add a few pieces of the chicken to the skillet and fry until golden brown.

6. Remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil.

7. In a separate bowl, mix together the sweet chili sauce, fish sauce, and sugar.

8. Add the fried chicken to the bowl and toss to coat with the sauce.

9. Sprinkle the green onions over the top of the chicken and serve immediately.
