Delicious Mexican Sopes
A traditional Mexican dish made with crispy sopes, topped with a variety of ingredients.
Ingredients
- β4-6 SopesHomemade or store-bought sopes
- β1 cup, shredded Mexican CheeseQueso fresco or Oaxaca cheese
- β1 cup, shredded CarnitasSlow-cooked pork or store-bought carnitas
- β1/4 cup, sliced Delicate Chorizo Mexican chorizo sausage
- β1 cup, grilled or boiled CornFresh corn kernels or canned corn
- β1/4 cup, chopped CilantroFresh cilantro leaves
- β1/2 cup Sour CreamOptional topping
- β1/2 cup SalsaOptional topping
- β2 tablespoons Lime JuiceOptional topping
- βto taste Salt
- βto taste Pepper

1. Preheat oven to 400Β°F (200Β°C).

2. Warm the sopes according to package instructions.

3. In a large skillet, heat 1 tablespoon of oil over medium-high heat.

4. Add the carnitas and cook until crispy, about 4-5 minutes. Set aside.

5. In the same skillet, add the chorizo and cook until crispy, about 2-3 minutes. Set aside.

6. In a separate skillet, grill or boil the corn until slightly charred.

7. Assemble the sopes by spreading a spoonful of carnitas on each sopes, followed by a spoonful of chorizo, corn, and cheese.

8. Sprinkle with cilantro and a squeeze of lime juice (if using).
