Egyptian Delicate Couscous Casserole
A delicious and flavorful casserole made with couscous, Egyptian spices, and delicate flavors.
Ingredients

- β2 medium delicate eggplantsliced
- β1 tsp egyptian spicesmix of cumin, coriander, and paprika
- β2 cups chicken broth
- β2 tbsp olive oil
- β1 small onionchopped
- β2 cloves garlicminced
- β1/2 cup feta cheesecrumbled

Preheat oven to 375Β°F (190Β°C).

Cook couscous according to package instructions.

In a large skillet, heat olive oil over medium heat.

Add chopped onion and cook until softened, about 5 minutes.
