Grassy Quinoa Bowl
A simple and flavorful quinoa bowl with a delicate Peruvian twist. This recipe is perfect for a quick and easy lunch or dinner.
Ingredients
- β1 cup Quinoa
- β2 tbsp Grassy Peruvian Olive Oil
- βto taste Salt
- β1/2 cup Delicate Red Onion
- β1 cup 1 cup mixed greens
- β1 cup 1 cup cherry tomatoes

1. Rinse the quinoa in a fine mesh strainer and drain well.

2. In a medium saucepan, heat the Peruvian olive oil over medium heat.

3. Add the red onion and cook until translucent, about 3-4 minutes.

4. Add the quinoa to the saucepan and cook for 2-3 minutes, stirring constantly.

5. Add 2 cups of water to the saucepan and bring to a boil.

6. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
