- ●1 block Labneh Cheese
- ●1/4 cup Olive Oil

Preheat oven to 400°F (200°C).

Toss eggplant with olive oil, salt, and pepper. Roast for 20-25 minutes.

Grill mushrooms until tender.

In a large skillet, sauté garlic until fragrant.

Add roasted eggplant, grilled mushrooms, and parsley to the skillet. Stir to combine.
