Delicate Korean-Style Baby Aubergine Dosirak
A delicate and flavorful Korean-inspired rice bowl dish featuring baby aubergine, perfect for a light meal.
Ingredients

- β1 cup Delicate Sushi Rice
- β1 tsp Dried Korean Chili Flakes (gochugaru)
- β2 tbsp Gochujang (Korean Chili Paste)
- β1 tsp Sesame Oil
- β1 tsp Sesame Seeds
- β1 Green Onion
- β1 Cucumber

Cook the sushi rice according to the package instructions.

Heat 1 tsp of sesame oil in a pan over medium heat.

Add the diced baby aubergine and cook for 3-4 minutes until tender.

In a small bowl, mix together gochujang, dried Korean chili flakes, and 1 tsp of sesame oil.

Add the gochujang mixture to the pan with the aubergine and stir to combine.

To assemble the dosirak, place a scoop of cooked sushi rice in the bottom of a bowl, followed by the aubergine mixture.
