Norwegian Chuck Roast Delight
A hearty, flavorful roast dish from Norway, perfect for a cold evening. The chuck roast is slow-cooked to tender perfection.
Ingredients
- β1 medium, sliced delicate onion
- β1 tsp norwegian allspice
- β2 lbs chuck roast
- β4 large, peeled and chopped roast carrots
- β2 cups beef broth
- β2 tsp brown sugar
- β2 tbsp olive oil
- β1 tsp salt
- β1 tsp black pepper

Preheat oven to 300Β°F (150Β°C).

Season the chuck roast with salt, black pepper, and norwegian allspice.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the chuck roast until browned on all sides, about 2-3 minutes per side.

Remove the roast from the pot and set aside.

Add sliced onion to the pot and cook until caramelized, about 10 minutes.

Add roast carrots to the pot and cook for an additional 5 minutes.

Add beef broth to the pot and stir to combine.

Return the chuck roast to the pot, cover with a lid, and transfer to the preheated oven.
