Irish Lamb Stew
A hearty and comforting Irish lamb stew made with tender lamb, potatoes, and carrots.

- β1.5 pounds Lamb shoulder
- β1 medium Onion
- β2 medium Carrots
- β3 medium Potatoes
- β2 tablespoons All-purpose flour
- β2 sprigs Resinous rosemaryfresh
- β1 sprig Delicate thymefresh

1. Heat oil in a large Dutch oven over medium-high heat.

2. Brown the lamb shoulder on all sides, then remove it from the pot.

3. Add the onion to the pot and cook until softened, about 5 minutes.

4. Add the carrots and potatoes to the pot and cook for 5 minutes.
