Irish Frittata Keto Recipe
A keto version of the traditional Irish frittata, made with eggs, vegetables, and a hint of spice. Perfect for a low-carb breakfast or brunch.
Ingredients

- β1/2 cup Irish Scrambled Eggs
- β1 medium Cucumber
- β1 small Onion
- β6 slices Bacon
- β1/2 cup shredded Cheddar Cheese

Preheat oven to 375Β°F (190Β°C).

Cook the bacon in a large skillet over medium heat until crispy.

Remove the bacon from the skillet, leaving the grease behind.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the sliced cucumber and cook for an additional 2 minutes.

In a large bowl, whisk together the eggs and a pinch of salt.

Pour the egg mixture over the vegetables in the skillet.

Cook the eggs until the edges start to set, about 2-3 minutes.

Sprinkle the shredded cheddar cheese over the top of the eggs.
