Smoked Veal Yakitori
Japanese-style grilled veal skewers with a delicate smoky flavor.
Ingredients
- β1 pound veal cutletsthinly sliced
- β2 tablespoons soy sauceJapanese-style
- β2 tablespoons sakerice wine
- β2 tablespoons mirinsweet Japanese cooking wine
- β1 tablespoon brown sugargranulated
- β2 teaspoons grated gingerfresh
- β2 cloves garlicminced
- β1 tablespoon sesame oilfor brushing
- β1/4 cup scallionsthinly sliced
- β2 tablespoons smoked sesame seedsoptional

1. In a large bowl, whisk together soy sauce, sake, mirin, brown sugar, grated ginger, and garlic.

2. Add the thinly sliced veal to the marinade and toss to coat.

3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

4. Preheat a grill or grill pan to medium-high heat.

5. Thread 2-3 pieces of marinated veal onto skewers.

6. Brush the grill or grill pan with sesame oil to prevent sticking.
