Smoky Shrimp Enchiladas
A twist on traditional enchiladas, this dish combines the flavors of smoky chipotle peppers and delicate shrimp for a spicy and savory meal.
Ingredients

- β2 tablespoons smoky chipotle peppers in adobo saucecanned or fresh
- β2 cups mexican enchilada sauce
- β8-10 corn tortillas
- β1 cup shredded cheese (Monterey Jack or Cheddar)
- β1/4 cup chopped cilantro
- β1 cup sour creamoptional
- βto taste salt and pepper

Cook shrimp according to package instructions until pink and fully cooked.
