Uruguayan-Style Stew
A hearty, comforting stew with tender beef and a blend of Uruguayan spices.
Ingredients
- β1 pound Uruguayan beef stew meat
- β2 medium Onion
- β3 cloves Garlic
- β2 inches Galangalgrated
- β2 medium Red bell pepperdiced
- β2 cups Beef broth
- β2 tablespoons Tomato paste
- β1 tablespoon Worcestershire sauce
- β1 teaspoon Dried oregano
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion, garlic, and galangal to the pot and cook until the onion is translucent.

Add the red bell pepper and cook for an additional 2 minutes.

Add the beef broth, tomato paste, Worcestershire sauce, oregano, salt, and pepper to the pot.

Return the beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 2 1/2 hours.

Serve hot, garnished with fresh cilantro if desired.
