Vietnamese Chicken Spring Rolls
A delicious and healthy Vietnamese dish made with chicken, vegetables, and rice noodles, served with a sweet and spicy sauce.
Ingredients
- β1 package (200g) Rice noodles
- β1 cup (250g) Cooked chicken breastShredded or diced
- β1 package (10-12 skins) Spring roll skin
- β1 head Delicate lettuceShredded
- β1 medium CucumberSliced
- β1 medium CarrotsGrated
- β1 cup (100g) Bean sprouts
- β2 tablespoons Peanut butter
- β1 tablespoon Soy sauce
- β1 tablespoon Hoisin sauce

Prepare the filling by mixing cooked chicken, shredded lettuce, sliced cucumber, grated carrots, and bean sprouts.

Soak rice noodles in hot water for 5 minutes. Drain and set aside.

Assemble the spring rolls by placing a tablespoon of the filling in the center of a spring roll skin.

Brush the edges of the spring roll skin with a little water.

Roll the spring roll tightly, starting from one corner.

Repeat with the remaining ingredients.

Serve the spring rolls with a sweet and spicy sauce made by mixing peanut butter, soy sauce, and hoisin sauce.
