Traditional Greek Kleftiko
A classic Greek dish of slow-cooked lamb, often served on special occasions. The tender meat falls off the bone and is infused with the flavors of the Mediterranean.
Ingredients
- β1.5 kg Lamb shoulderbone-in
- β2 tbsp Greek olive oil
- β1 bunch Bitter root vegetables (such as beets)
- β4 sprigs Delicious rosemary
- β1 tsp Greek seasoning
- β1 tsp Salt
- β1/2 tsp Black pepper

Preheat oven to 120Β°C (250Β°F).

Rub the lamb shoulder with Greek olive oil, Greek seasoning, salt, and black pepper.

Add the lamb shoulder to a large Dutch oven or a heavy roasting pan.

Add the bitter root vegetables and sprigs of rosemary around the lamb.

Cover the pan with a lid or foil and transfer to the preheated oven.

Braise the lamb for 3-4 hours, or until tender and falling apart.

Remove the lamb from the oven and let it rest for 10-15 minutes before slicing.

Serve the sliced lamb with the roasted root vegetables.
