Irish Beetroot Gratin
A delicious Irish-inspired beetroot gratin dish that combines the earthy sweetness of beets with the richness of Irish cheese.
Ingredients
- β2 large beetroot
- β1 cup, grated Irish cheddar cheese
- β1/2 cup cream
- β3 cloves, minced garlic
- β2 tbsp butter
- β1 tsp thyme
- βto taste salt
- βto taste black pepper
- β1 gratin dish

1. Preheat the oven to 375Β°F (190Β°C).

2. Peel and slice the beetroot into 1/2-inch thick rounds.

3. In a large bowl, combine the grated cheese, cream, garlic, butter, thyme, salt, and pepper.

4. Add the sliced beetroot to the bowl and toss to coat with the cheese mixture.

5. Transfer the beetroot mixture to a gratin dish and top with additional grated cheese.

6. Bake for 25-30 minutes or until the top is golden brown and the beets are tender.
