Southern Thai Chicken Gaeng Curry
A deliciously rich and flavorful curry dish featuring tender chicken, caramelized onions, and a blend of southern Thai spices.
Ingredients
- β1 lb chicken breastcut into bite-sized pieces
- β1 cup caramelized onions
- β2 tbsp southern Thai curry pastestore-bought or homemade
- β1 can coconut milk14 oz
- β1 tsp fish sauceoptional
- β1 tsp brown sugar
- β1/4 cup gaeng curry leavesfresh or dried
- β2 cups chicken broth
- βto taste salt
- βto taste black pepper

Heat oil in a large pan over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the caramelized onions and cook for an additional 2 minutes.

Add the southern Thai curry paste and cook, stirring constantly, for 1-2 minutes.

Pour in the coconut milk and bring the mixture to a simmer.

Add the fish sauce, brown sugar, gaeng curry leaves, and chicken broth.
