Vietnamese Caramelized Noodle Bowl
A sweet and savory Vietnamese-inspired noodle dish made with caramelized onions, tender beef, and a sprinkle of fresh herbs.
Ingredients
- β1 cup rice noodlespreferably fresh
- β1 pound beef stripssirloin or ribeye work well
- β1 cup caramelized onionssee note
- β1 cup coconut milkfull-fat or low-fat
- β2 tablespoons fish sauceor to taste
- β2 tablespoons lime juicefreshly squeezed
- β1/4 cup chopped cilantrooptional
- β1 teaspoon saltor to taste
- β1/2 teaspoon pepperor to taste

Cook the rice noodles according to package instructions. Drain and set aside.

In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the beef strips and cook until browned, about 3-4 minutes. Remove from heat and set aside.

In the same skillet, add another tablespoon of oil over medium heat. Add the caramelized onions and cook for 1-2 minutes.

Pour in the coconut milk, fish sauce, and lime juice. Stir to combine and bring to a simmer.

Add the cooked beef back into the skillet and stir to coat with the sauce.

To assemble the bowls, place a portion of noodles into each bowl. Add a portion of the beef and onion mixture on top.

Garnish with chopped cilantro, if desired. Season with salt and pepper to taste.
