- β1/2 cup shredded Monterey Jack Cheese
- β2 tbsp Coconut Oil
- β2 tsp Thai Red Curry Paste
- β1 tbsp Fish Sauce
- βchopped (for garnish) Fresh Cilantro
- βfor serving Fresh Lime Wedges
