Tunisian Boudin Tagine
A flavorful Moroccan-inspired stew cooked to perfection in a traditional clay pot. This hearty dish features boudin sausage and creamy tagine sauce.
Ingredients
- β1 pound Boudin SausageCasings removed
- β2 cups Tagine SauceHomemade or store-bought
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 tablespoon GingerGrated
- β2 cups Chicken BrothLow-sodium
- β2 tablespoons Tunisian Olive OilFor cooking
- β1/4 cup CilantroChopped (optional)
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black PepperTo taste

Heat the Tunisian Olive Oil in a large clay or ceramic tagine over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the boudin sausage and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the chicken broth, tagine sauce, salt, and black pepper; stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, until the flavors have melded together and the sauce has thickened, about 20 minutes.
