Tunisian Red Pepper Tagine
A flavorful and aromatic stew from Tunisia, made with red peppers, tagine spices, and tender chicken.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β2 red peppersany color, sliced
- β1 medium onionchopped
- β4 cloves garlicminced
- β2 tablespoons tagine spice blendor to taste
- β2 tablespoons olive oilfor cooking
- β1 cup chicken brothlow-sodium
- β2 tablespoons honeyoptional

Heat oil in a large Dutch oven over medium-high.

Add chicken and cook until browned, about 5 minutes.

Remove chicken and set aside.

Add onion and garlic to pot and cook until softened, about 5 minutes.

Add peppers and cook until tender, about 5 minutes.

Add tagine spice blend and cook for 1 minute.

Add chicken broth and honey (if using) to pot.

Return chicken to pot and bring to a simmer.

Cover pot and transfer to oven.

Bake for 25-30 minutes, or until chicken is cooked through.
